The High Wire

Ingredients

• 1.5 oz cognac
• 0.5 oz Cointreau
• 0.75 oz fresh lemon juice
• 0.25 oz simple syrup
• 1 dash Peychaud's bitters
• 1 egg white

Instructions

1. 1Combine all ingredients in a shaker without ice and dry shake for 15 seconds.
2. 2Add ice and shake vigorously for another 15 seconds.
3. 3Double-strain into a chilled coupe glass.
4. 4Allow the foam to settle and rise naturally.
5. 5Add a single drop of bitters on the foam surface.
