Themed Cocktail

The Zihuatanejo Sunset

Ingredients:

  • 2 oz aged rum (Appleton Estate or similar)
  • 1 oz fresh pineapple juice
  • 0.75 oz lime juice
  • 0.5 oz orgeat syrup
  • 0.25 oz grenadine
  • 2 dashes Angostura bitters

Instructions:

  1. 1Combine aged rum, pineapple juice, lime juice, orgeat, and bitters in a shaker with cubed ice.
  2. 2Shake vigorously for 10 seconds until frost forms on the shaker.
  3. 3Strain into a rocks glass filled with crushed ice.
  4. 4Pour grenadine slowly over the back of a spoon so it sinks and creates a sunset gradient.
  5. 5Garnish with a pineapple wedge and a lime wheel on the rim.
