Lotso's Strawberry Sour

Ingredients

• 2 oz coconut rum
• 1 oz fresh strawberry puree
• 0.75 oz fresh lemon juice
• 0.5 oz hibiscus simple syrup
• 0.5 oz egg white or aquafaba
• 1 tsp black pepper tincture

Instructions

1. 1Dry shake all ingredients without ice for 15 seconds to build the foam.
2. 2Add ice and shake again hard for 12 seconds.
3. 3Double strain into a chilled coupe glass — no ice.
4. 4Let the foam settle on top into a smooth cap.
5. 5Garnish with three drops of hibiscus syrup dragged into a heart shape on the foam — Lotso's cruel sweetness.
