The Sacred Heart Sour

Ingredients

• 1.5 oz bourbon
• 0.75 oz fresh lemon juice
• 0.5 oz honey syrup
• 0.5 oz aquafaba (vegan egg white substitute)
• 2 dashes Angostura bitters
• 1 Luxardo cherry

Instructions

1. 1Dry shake bourbon, lemon juice, honey syrup, and aquafaba without ice for 15 seconds.
2. 2Add ice and shake again hard for 12 seconds to chill and build the foam.
3. 3Strain into a chilled coupe glass — foam should sit cleanly above the pour.
4. 4Dot two drops of Angostura bitters on the foam and swirl with a toothpick.
5. 5Drop a Luxardo cherry in the center — it's a little sweet, a little tart, and unexpectedly moving.
