Kaiju Blue

Ingredients

• 1.5 oz mezcal
• 0.75 oz blue pea flower–infused coconut water
• 0.5 oz fresh lime juice
• 0.5 oz agave syrup
• 0.25 oz hibiscus syrup
• 3 dashes Angostura bitters

Instructions

1. 1Steep blue pea flowers in warm coconut water for 10 minutes and strain before using.
2. 2Combine mezcal, blue coconut water, lime juice, agave syrup, and bitters in a shaker with ice.
3. 3Shake for 12 seconds and strain into a rocks glass over a large clear ice cube.
4. 4Drizzle hibiscus syrup in a ring around the rim so it bleeds down through the blue.
5. 5Garnish with a dehydrated lime wheel and a pinch of black sea salt on the ice cube's surface.
