The Big Blue Brain

Ingredients

• 1.5 oz gin
• 0.75 oz butterfly pea flower syrup
• 0.5 oz fresh lemon juice
• 0.25 oz simple syrup
• 1 oz tonic water
• 1 dash orange bitters

Instructions

1. 1Combine gin, butterfly pea flower syrup, lemon juice, and simple syrup in a shaker with ice.
2. 2Shake hard for 12 seconds — the acid will shift the color from blue to purple.
3. 3Double-strain into a chilled coupe glass.
4. 4Top with a splash of tonic water.
5. 5Add orange bitters on top.
