City of Stars Sour

Ingredients

• 1.5 oz gin
• 0.75 oz fresh lemon juice
• 0.5 oz elderflower liqueur
• 0.5 oz lavender syrup
• 1 oz Champagne
• 1 egg white

Instructions

1. 1Dry shake gin, lemon juice, elderflower liqueur, lavender syrup, and egg white without ice for 15 seconds
2. 2Add ice and shake again hard for another 15 seconds
3. 3Double strain into a chilled coupe glass — the foam should be thick and silky
4. 4Carefully pour Champagne down the side of the glass to float under the foam
5. 5The lavender will give it a dreamlike purple-gold hue in candlelight
6. 6Garnish with a single dried lavender sprig laid across the foam
