Starry Stage Sour

Ingredients

• 1.5 oz Japanese shochu
• 0.75 oz fresh yuzu juice
• 0.5 oz simple syrup
• 1 egg white
• 3 drops rose water
• 2 dashes Peychaud's bitters

Instructions

1. 1Combine shochu, yuzu juice, simple syrup, and egg white in a shaker without ice.
2. 2Dry shake vigorously for 15 seconds to build foam.
3. 3Add ice and shake again for another 15 seconds.
4. 4Double strain into a rocks glass over ice.
5. 5Add rose water drops and bitters on the foam.
